Lamb is a succulent, versatile meat that needs minimal preparation yet can vary in taste, according to the age of the animal and the type of pasture it was grazed on.

Spring lamb is very tender and has a more delicate flavour than lambs that have had more time to graze and grow thus developing a stronger more distinct flavour.
